More Petit Fours & Plating Desserts!
It's getting chilly in Paris and what better way to warm up than with a nice cup of tea and pretty little petit fours and yummy, foamy mousses with berries and crepes?!
This week was all about restaurant desserts and plating. I learned some new tricks with respect to decorating. We made more cookies (but petit four sized), baby macarons, mini financiers and today we plated lemon and berry mousse with crepes.
In all honestly I am feeling just a tad bit frustrated and uninspired. This term is a little slow moving for me and I find that we are just learning more of wh
at we already did last term. I feel like I need to branch out a bit and I need to learn something I don't already know how to do! I discussed how I felt with our Chef and he seemed to understand my plight and agreed with me - I think he was feeling the same way! ha ha!
I honestly think some of this curriculum is a bit stale and things need to be shaken up a bit b/c I feel like its slowly bringing me back into this weird 'funk'.
Don't get me wrong, I am still enjoying what I am doing and learning and having an amazing fun time - I just like a challenge!
